Fat Girl's Recipe : Chicken Florentine

finally internet connection is ok! (sigh) im making Chicken Florentine an Italian dish. it suppose to be grilled but we didn't have any grill. so i decided to fry it then baked.

everything about today was FINE! it was a great day.
what was for dinner? unbelievable..!!! everyone liked it!

CHICKEN FLORENTINE

ingredients:
6 pcs. breast fillet (the big ones.)
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/2 cup of bread crumbs (i used the regular bread crumbs but if you happen to have italian seasoned bread crumbs... GRAB IT!)
2 eggs, separated
1 pack of spinach
1/8 tsp nutmeg
2 tbsp olive oil
6 slices of mozzarella (any would do as long it is not yet grated)
1 bottle of arrabiatta sauce (actually this sauce a roman sauce mixed with garlic, tomatoes and herbs. i took the spicy one by mistake but it was ok! my boyfriend likes it spicy and hote! hahaha! if you're not a fan of hot and spicy sauces you can use the regular arribiatta sauce or marinara sauce)
1 can crashed and peeled tomatoes
10 g parsley chopped
500 g Spaghetti

procedure:

1. Season chicken breasts with salt and pepper. beat your egg whites then add it on the breast.
2. Put your bread crumbs in a plate. Roll your breasts lightly and coating it evenly. Refrigerate it for a couple of minutes.
3. Boil your spinach leaves then shock it. Chop roughly. Add your egg yolks, nutmeg, salt and pepper. Set aside.
4. Deep fry Chicken. Half cooked. (wag kayong magalala i-oven naman natin sya)
5. In a deep dish add olive oil. drop your arribiatta sauce and tomato in can. This sauce is your bed for your chicken. Each chicken top it with your spinach mixture. Then your Mozerella slices for each.
6. Bake for about 15 minutes.

Assemble:
Pasta on the side and your chicken.

Perfect for your hubby, your boyfriends or special someone. I am in love! hahaha!

Fat Girl's Recipe : Pork Salpicao...

while arguing with my amazing boyfriend.. my ninang asked what we wanted to have for dinner? and i said why don't we have a chicken salpicao. we didn't have any chicken breast so i said why don't we use pork. so we called it:

Pork Salpicao

Ingredients:

500 g of pork
3 tbsp. liquid seasoning
3 tbsp. worcestershire sauce
1 tsp. ground black pepper
2 tbsp. oil
2 tbsp. butter
2 tbsp. minced garlic
1/2 cup button mushroom
2 tbsp all purpose flour
1/2 cup grated cheese
1 tbsp. chopped parsley (optional)

Procedure:

1. marinate pork in liquid seasoning, worcestershire sauce sauce and ground black pepper at least 2 hours.
2. heat oil in a pan, melt butter and saute garlic.
3. remove pork and reserve the marinade. add the pork in the pan and saute over high heat so the pork cooks faster. add the mushroom. then the marinade. simmer for a couple of minutes until the sauce is thick.
4. then add the garnish. cheese and parsley.

Fat Girls Recipe: Beef Casserole



my godmother haven't been home since 8am. so i was left with my sister. until it passed 11am and she's still not home. so i decided to get up in bed and cook us lunch. and i did! yey!

Beef Casserole

ingredients:
one beef loaf
tomato - cut into cubes
bell pepper - cut into cubes
potato - cut into cubes
onion - cubes
garlic cloves - crashed and skinned
racks' barbecue sauce
procedure:
1. use a pressure cooker to soften the beef.
2. preheat oven.

3. on a deep casserole put the beef. add the rest of the ingredients.

4. roast for 45 minutes.

Fat Girl's Recipe : Chocolate Cake

Dear Zizilia,

i am still trying to figure out what to call my cake. it's for father's day although i can't be with my love, i know he's spending a quality time with his family specially with his daughter. hope he's having fun. while he does that.. i will be baking a cake. a mix of chocolate and coffee. me and my sisters love chocolate and my dad loves coffee so i guess you get what i am trying to say. anyways.. beside the fact its my own creation.. its also for my love and my dad. both of them are great dads to their daughters... if only they could taste it.

Father's Day Cake

ingredients:
3 and 1/2 cups cake flour
6 tbsp cocoa powder
1 1/2 tbsp coffee
1 tbsp cinnamon
2 cups sugar
250 g. butter melted
50 ml oil
3 eggs
2 cups water (depends)
30 g. baking powder
10 g. baking soda

procedure:
1. Preheat Oven. 370 degrees. if you're using a small oven like me, that the highest degrees is only about 250 degrees that's fine. Preheat for about 20 minutes.
2. Mix all dry ingredients in you're mixing bowl.
3. Add butter in your dry ingredients make sure it crumbles all together.
4. Add the eggs. Then your oil.
5. Water is optional if you think its really sticky and the texture is thick that you can't mix easily you can add the water.
5. Don't forget to grease you baking pan and put a baking sheet or if you don't have one, bond paper is ok.
6. bake for 45 minutes and you're DONE!

The Fat Girl’s Food Obsession

I always wanted to write a book. I just didn’t know where to start. Now I have come up with this blog where I could definitely write everything about FOOD. See when you are a Fat Girl taking up Culinary Arts it covers all the insults that she or he will hear in the days to come. So she figures if she takes a course that will relate to her physical aspects then she wouldn’t be able to hear those insults or it is a possibility that it would less the pain. My Name is Rozielle Abella, I’m 23 years old and I am taking up Culinary Arts in The Philippine Women’s University, a sibling to four, and a daughter to Engr. Roberto Abella and Mrs. Elisa Abella. And this is the beginning of my Food Obsession.

They say when you eat too much it’s not healthy and it will KILL you. Not in my case, I love food. No matter how dangerous they are. When you think of pork chops with buttered veggies and mashed potatoes, imagine the wonderful colours, the succulent taste, the amazing aroma. Who would resist an awesome dish? Then someone answers; the health conscious, the vegetarians and the PETA. Anyway enjoy it while we’re young right? And come to think there are unbelievable dishes that we can still eat that are healthy and fat free. Take note it is still FOOD!
